As I’m sure with your family, food is an important part of the trip. I personally love going out to eat when I am on vacation. You can’t go wrong with great food and zero clean up. However for the sake of camping (and the pandemic) we plan to do all meals ourselves. I wanted to keep this trip very relaxed. I didn’t want to spend hours in the kitchen but I also didn’t want boring, so here’s what we are bringing.
Eggs Benedict Casserole
This is a super simple recipe my family has used for awhile now. It also happens to be easy to make and will feed a large amount of people on a budget. Prepare the night before and bake in the morning.
French Toast Casserole
Noticing a trend here? Again we went with a casserole for breakfast. Simple, put it together the night before and bake it in the morning. I got this recipe from Chrissy Teigan’s Cravings cookbook. My kids especially love this. It’s sweet and salty. I highly recommend purchasing!
We kept it super simple for lunch time. We did not go back to the house so we chose things that required very little clean up and less chance of trash getting left on the beach. I’m talking sandwiches with chips, hot dogs with fresh fruits and veggies.
Dinner is where I felt we really got to shine.
Cubanos & Sweet corn
I really am just a sandwich lover, I have never met one that I didn’t like. This is another recipe from Cravings and oh my is it fantastic. The only thing I add that she does not have is bacon. My husband can and will put it on everything so at this point in our marriage I try to incorporate it somehow.
Currently it is sweet corn season and a primary Summer diet staple. There’s only 3-4 weeks of good sweet corn and we legit have it as much as we can. I am 100% biased and believe Nebraska’s is the best. Try and change my mind.
Chrissy’s Capone Burgers and Homemade Onion Rings
Ok, so I’m slightly obsessed with this cookbook. But honestly you guys’ I have yet to make a bad meal from it. And this meal I have made several times for multiple people and I have yet to have anyone dislike it. Everything is fresh and really made with love. Again HIGHLY recommend purchasing.
While we do have all our meals planned out and ready to go. You have to have snacks, drinks, and of course dessert, because vacation.
